Now I need to tell you about the crockpot that I use. You can see it in the photo below but I really need to tell you about it. This is the Hamilton Beach Stay or Go 6-Quart Portable CrockpotCrockpot Chicken and Stuffing Recipe (3) that I purchased on Amazon almost 2 years ago. I use it often! I really like it because it’s a 6 quart that can cook lots of really big meals. I also like it because it has a lid that seals tight. This makes is awesome for taking meals on the go. I know they won’t spill. If, or when this crockpot goes out I already plan to buy another one just like it. It’s one of the best crockpots I’ve owned. I love it.

Since it’s almost Thanksgiving I would love to share our Turkey Brine Recipe. Once I learned how to Brine a Turkey I have never made it any other way. It’s the best technique I’ve tried on my turkey. I have a friend that has all sorts of allergies to food. She has to eat her turkey with no stuffing or no gravy. She swears she was a bit depressed about it almost. I made her my favorite brine turkey recipe and she says the turkey doesn’t need gravy or stuffing with it. It’s loaded with flavor and she is happy to eat it all by itself! I was most happy just to make her a bit happy!

INGREDIENTS

INSTRUCTIONS

  • Spray the crockpot with non stick cooking spray
  • Place the defrosted chicken breasts in the bottom of the crockpot as your first bottom layer.
  • Next tear open two boxes of stuffing mix (we used the Stove Top Chicken flavor), pour the dry mix over the raw chicken.
  • In a separate bowl, mix together the soup and sour cream. Top this mixture over the dry stuffing mix.
  • The last layer will be the frozengreen beans.
  • Now add about 1 cup of water to the top of this mix.
  • Cook on high for 4 hours or cook on low for about 7 to 8 hours.
  • Tip: About 1/2 way between the cooking time use a fork to fluff the stuffing mix. This will allow the water to drop through the soup mix and create a steam to cook the stuffing. Add less water if you prefer a dry stuffing or add more water if you like it really moist.

Did you know you can make a Chicken and Stuffing Casserole?!! You can!! It’s easy to put together and just as tasty as this crockpot dinner recipe!

This recipe can be made with day-old bread that you turn into stuffing or you can use the box stuffing mix too. This recipe was made with bread that was left over and toasted in the oven with a blend of stuffing seasonings.

Someone asked me if I can make this recipe without cream soup. Cream soup is what makes this recipe extra special. The soup adds a level of flavor and moisture required to balance out this dish. You can make your own cream soup but I would definitely include it!

We’ve got an update to this recipe! We’ve added a layer of swiss cheese to the top of this casserole recipe and it doesn’t disappoint! It’s absolutely scrumptious! Just add the slices of swiss cheese at the very end of the cooking time.

Be sure to give it about 10 minutes to the cheese has melted and browned slightly! Of course, everything is better with cheese. You can add different types of cheese too! We prefer swiss personally.

This recipe also tastes pretty amazing when it’s served with a hot brown gravy! It completes this meal.

FAQs

Does chicken need to be covered in liquid in crockpot? ›

When cooking meat or poultry, the water or liquid level should cover the ingredients to ensure effective heat transfer throughout the crock. Some manufacturers of slow cookers recommend adding liquid to fill the stoneware 1/2 to 3/4 full. Follow the manufacturer's recipes and directions for best results.

Is it better to cook chicken on high or low in crockpot? ›

Always cook your boneless skinless chicken breasts on LOW for the best results. I do not recommend cooking boneless chicken breast on HIGH, as it will become very dry and tough, even if you check it early. On high, the chicken turns out drier; I consistently have the best results with low.

Do you cook stuffing before putting it in the chicken? ›

Many cooks prefer to cook the stuffing separately from the chicken. The stuffing is placed in a buttered baking dish and cooked during the last 45 minutes to an hour of the roasting time.

How long does it take to cook raw chicken in a slow cooker? ›

Cover your crock pot and cook chicken breasts on low for 6-7 hours or on high for 3-4 hours. Chicken is done when the internal temp reaches 165 degrees F. Use chicken in your favorite recipes. Perfect for shredding!

How do you keep chicken from drying out in a slow cooker? ›

Chicken breasts are a lean cut and the key to slow cooking them without drying them out involves the right amount of moisture. Add just enough liquid to come 1cm up the side of the bowl. Cover and cook on High for 2 ½-4 hours or on Low for 4-6 hours.

How long to leave chicken in crockpot on low? ›

What is this? With the exception of larger recipes (like 8+ servings), It only takes 2.5-3.5 hours on LOW for boneless, skinless chicken breast to be fully cooked in the slow cooker.

Is 4 hours on high the same as 8 hours on low? ›

A general rule of thumb from Luis Sanchez, senior category manager for the appliance manufacturer Breville: To go from "High" to "Low" (or vice versa), multiply (or divide) the original time by 1.5 to 2.5 hours. And as with the cooking times for specific ingredients, these times are approximate.

Is it okay to put raw chicken in a slow cooker? ›

Yes, you can put raw chicken in a slow cooker! Slow cookers and Crock-Pots are designed to cook raw meats. The direct heat from the pot, lengthy cooking time and steam created from the tightly covered container destroys bacteria, making slow cooking safe. You can put frozen chicken in a slow cooker, too!

Does chicken get more tender the longer you slow cook it? ›

That is why tough meats become “fork tender” in the slow cooker. Chicken breasts have very little connective tissue; that means they can be cooked quickly because the long cooking time needed to soften connective tissue isn't necessary. They also have little fat, which means they can become dry if cooked too long.

Is it okay to put stuffing inside a chicken? ›

If stuffing whole poultry, the ingredients for the stuffing can be prepared ahead of time. Keep wet and dry ingredients separated and chill. Mix wet and dry ingredients just before putting stuffing into a casserole or filling the bird's cavity. Make sure the bird is loosely stuffed and cook immediately after stuffing.

Does stuffing a chicken make it taste better? ›

Cooking chicken is one thing, but cooking chicken with stuffing takes flavor to a whole new level. Stuffing adds a delicious layer of flavour to chicken by steaming it from the inside and soaking up the juices that may have been otherwise lost.

Should I put stuffing in my chicken? ›

If you've never done it before, roasting a whole chicken can be intimidating. But stuffing a chicken is an easy way to add tremendous flavour to the whole bird. Roasting a stuffed whole chicken is also an economical way to make dinner for a crowd, plus you can use leftovers for a chicken broth.

Is 4 hours long enough to slow cook chicken? ›

A whole chicken takes on average 4 hours in the slow cooker on high, or 7 hours on low. At the end of the cooking time use a meat thermometer to make sure the internal temperature of the chicken is 165 degrees.

Can I leave chicken in crockpot for 8 hours? ›

Cook the whole chicken

Keep the skin on (you can remove after cooking), add lots of herbs, layer the bottom of your crock with potatoes, carrots and onions, let it go unsupervised for 8 hours, and walk into a very nice weeknight version of the Sunday Roasted Chicken.

Is chicken cooked after 3 hours in slow cooker? ›

Place the chicken and stock, broth, or water in a 4-quart or larger slow cooker. Cook the chicken. Cover and cook until the chicken is tender and registers an internal temperature of 165°F, 4 to 5 hours on the LOW setting, or 2 to 3 hours on the HIGH setting.

Should liquid always cover meat in slow cooker? ›

To keep a pot roast from drying out, your slow cooker needs liquid to create a moist environment, and that can include meat or vegetable stock, wine or water. This doesn't mean the meat should be submerged; a cup or two of liquid will be enough, since the cooker is covered and liquids stay trapped inside.

Does all food need to be covered in liquid in slow cooker? ›

A slow cooker does not need any liquid added at the beginning of the cooking process, because it will generate steam, which will become liquid in the bowl. For recipes that use liquid, and have not been written specifically for a slow cooker it make sense to reduce the amount of liquid by half.

Why does chicken get watery in crockpot? ›

This moist environment allows you to leave food to cook for hours without risking it drying out. But because there is no evaporation, the liquid isn't able to reduce and thicken naturally in a slow cooker, often resulting in watery sauces and loose gravies.

Do vegetables need to be covered with liquid in slow cooker? ›

Because your slow cooker will have a tightly sealed lid, the liquid won't evaporate so if you're adapting a standard recipe, it's best to reduce the liquid by roughly a third. It should just cover the meat and vegetables.
